The tea
First harvest sencha from Kagoshima, steamed in the standard fashion rather than deep-steamed, so the leaves stay needle-shaped and the liquor stays clear rather than cloudy.
Brewing
5g, 70°C water, sixty seconds for the first infusion. Boiling water will make it bitter and there is no recovering it. The same leaves give a second and third infusion, each a little shorter than the last.
