How we roast
Coffee is only good for a few weeks, so we roast to order and keep the list short. Orders leave Cheyenne within 2 business days. Equipment can come back within 30 days; opened coffee cannot, for reasons we hope are obvious.
A short list, roasted weekly
We carry 13 coffees across 4 categories, between $26.00 and $138.00. We keep the list short because coffee is only good for a few weeks and a long list means old bags. Everything is roasted to order on a Tuesday and leaves on a Wednesday, which is why we cannot always ship the same day and why what arrives tastes like what we tasted.
Sourcing
We buy through two importers who publish what the farm was paid, and we print that number on the bag. Lots are bought by the sack, not the container, which is what lets a small roaster carry a single-farm coffee at all. When a lot runs out we do not substitute quietly — the coffee comes off the list.
Roast and rest
Everything is roasted on a 12kg drum machine and profiled to the lot rather than to a house curve. Bags are one-way valved and filled the day after roast, and we print the roast date rather than a best-before, because a best-before on coffee is a marketing date and everyone knows it. Give a filter roast four days and an espresso roast ten.
